Put a knob of butter and the cream into a pan and heat gently.
Cut chunky slices of bread and pop under the grill or into a
toaster.
Crack the eggs into a bowl and whisk. Add the eggs into the pan
with the cream and butter. Keep moving the mixture constantly with a
spatula.
Just before the eggs are done remove them from the heat and set
aside as they will keep cooking.
Get the toast from under the grill and put it on a plate. Season
your eggs and pop them onto the bread. Place the chopped smoked
salmon and chives on top off the eggs and serve.
