Wash your potatoes and cut them into even sized wedges leaving
the skin on.
Place the potato wedges on a baking tray and add salt, cajun
seasoning and thyme.
Drizzle the oil on and using tongs make sure the wedges are
fully coated with the mixture.
Place in the oven for 30 minutes at 180C or 360F
Open the oven and using a pair of tongs or a spoon toss the
potatoes around every ten minutes during the cooking process until
they're golden brown, at which point they should be removed.
