Ingredients: * 1 kg of mixed fish: firm white fish such as hake or cod are best, plus large peeled prawns and crab * claws.
* 2 tablespoons of oil
* 1 medium onion, sliced
* 1 leek, sliced
* 2 cloves garlic, crushed
* 2 large tomatoes, skinned and quartered
* A few saffron strands
* 2 bay leaves
* A bunch flat leafed parsley
* Salt and pepper
* 150 ml of dry white wine
Directions:
Prepare the fish and cut into 4 cm pieces.
Heat the oil in a large saucepan and fry the onion, leek, garlic and tomatoes for a few minutes.
Put the saffron strands in a little boiling water for a moment and then drain and add the saffron to the vegetables.
Add the white fish and pour over enough boiling water to cover.
Put in the herbs and salt and pepper and then simmer for 10 to 15 minutes.
Add the prawns and cracked crab claws and wine, then simmer for a further 5 minutes.
Remove the herbs and serve in deep bowls with lots of crusty French bread.
